  • 3/4 cup all-purpose flour
  • 1/2 cup butter (softened)
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar (packed)
  • 1 1/2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch (heaping)
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine oats, flour, butter, salt, baking soda, and brown sugar until coarse crumbs form.
  3. In a saucepan over medium heat, cook rhubarb, granulated sugar, cornstarch, and water until rhubarb softens and mixture is clear. Stir in vanilla extract and let cool.
  4. Press most of the crumb mixture into an 8×8-inch baking dish, pour rhubarb filling on top, and sprinkle remaining crumbs over.
  5. Bake for 30-40 minutes until golden and set. Cool completely before slicing.
