  • 1/4 cup (60 ml) water
  • 1/4 cup (60 ml) freshly squeezed lemon juice
  • 1.8 kg (4 lb) granulated sugar

Instructions

  1. Sterilize glass jars in the oven at 130°C (270°F) for 20 minutes.
  2. Wash apricots, remove blemishes, halve them, and discard stones.
  3. In a large saucepan, combine apricots with lemon juice and water. Simmer over medium heat until tender (10-15 minutes).
  4. Gradually stir in sugar until dissolved; then bring to a boil, stirring frequently.
  5. Check for setting point using the chilled plate test after about 20 minutes of boiling.
  6. Once set, carefully ladle into sterilized jars and seal tightly.
