- 2.5 kg (5.5 lb) fresh apricots
- 1/4 cup (60 ml) water
- 1/4 cup (60 ml) freshly squeezed lemon juice
- 1.8 kg (4 lb) granulated sugar
Instructions
- Sterilize glass jars in the oven at 130°C (270°F) for 20 minutes.
- Wash apricots, remove blemishes, halve them, and discard stones.
- In a large saucepan, combine apricots with lemon juice and water. Simmer over medium heat until tender (10-15 minutes).
- Gradually stir in sugar until dissolved; then bring to a boil, stirring frequently.
- Check for setting point using the chilled plate test after about 20 minutes of boiling.
- Once set, carefully ladle into sterilized jars and seal tightly.
