  • 2 pounds boneless skinless chicken breasts (cut into 1-inch chunks)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1 1/2-inch pieces)
  • 1 sweet onion (cut into 1 1/2-inch pieces)
  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic (minced)
  • 1 tablespoon freshly grated ginger
  • Salt and pepper (to taste)
  • Canola oil

Instructions

  1. In a medium bowl, mix barbecue sauce, teriyaki sauce, garlic, and ginger. Set aside half for later.
  2. Marinate chicken in the remaining mixture for at least 2 hours or overnight for best flavor.
  3. Thread marinated chicken, pineapple, bell pepper, and onion onto skewers. Brush with canola oil and season with salt and pepper.
  4. Preheat grill to medium heat. Grill kabobs for about 10 minutes or until chicken reaches an internal temperature of 165°F, turning occasionally.
  5. Brush with reserved marinade during the last few minutes of cooking. Serve hot.
