Ingredients
- 2 cups uncooked pasta (170g)
- 1 large beetroot (170g), peeled and chopped
- 100g feta cheese (or paneer)
- 2–3 garlic cloves, chopped
- 2 tsp olive oil
- 1 tbsp lemon juice
- Salt to taste
- Crushed black pepper to taste
- Fresh basil or cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat. Sauté garlic until fragrant.
- Add chopped beets and a pinch of salt; sauté for 1–2 minutes. Add one tablespoon of water, cover, and simmer until tender (13–15 minutes).
- Cook the pasta according to package instructions until al dente; reserve half a cup of pasta water before draining.
- Blend cooked beets, garlic, feta (or paneer), lemon juice, and reserved pasta water until smooth.
- Toss drained pasta with beet sauce; adjust consistency with more pasta water if needed.
- Serve garnished with crumbled feta and fresh herbs.
