  • 16 corn tortillas
  • 2 cups green cabbage, thinly sliced
  • 2 cups purple cabbage, thinly sliced
  • 2 avocados
  • Fresh cilantro
  • Lime juice
  • Avocado oil

Instructions

  1. Prepare the cilantro lime slaw by mixing green cabbage, purple cabbage, lime juice, cilantro, honey, salt, and pepper in a large bowl. Set aside.
  2. In a food processor, blend avocados, garlic, cilantro, cumin, red pepper flakes, lime juice, red wine vinegar, olive oil, and salt until smooth to create the avocado crema.
  3. Season shrimp with garlic powder, smoked paprika, cumin, ancho chili powder, sea salt, and black pepper.
  4. Heat avocado oil in a non-stick skillet over medium-high heat; cook shrimp for 2-3 minutes on each side until they are pink and opaque.
