Instructions

  1. Prepare peaches by washing and blanching them in boiling water, then quickly transfer to an ice bath for peeling.
  2. For light syrup, mix 2 cups sugar with 4 cups water or 1 1/2 cups honey with 4 cups water, bring to a boil, and keep warm.
  3. Halve the peeled peaches, remove pits, and pack them into warm jars.
  4. Fill jars with prepared syrup, leaving a 1/2-inch headspace.
  5. Process in a boiling water bath: pint jars for 20 minutes; quart jars for 25 minutes.
  6. Cool jars on a towel until completely sealed.
