  • 1 tablespoon olive oil
  • ⅓ cup balsamic vinegar
  • 2 tablespoons dry white wine (or reduced-sodium chicken broth)
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 4 medium yellow onions
  • 1 bunch fresh thyme leaves

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a baking dish, mix melted butter and olive oil. Whisk in balsamic vinegar, white wine (or broth), sugar, salt, and pepper until combined.
  3. Peel and halve the onions, keeping root ends intact. Place cut-side up in the baking dish.
  4. Cover loosely with foil and bake for 30 minutes.
  5. Remove foil, turn onions cut-side down, and bake uncovered for an additional 20–25 minutes until tender and caramelized.
  6. Serve cut-side up garnished with fresh thyme if desired.
