  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter (for crumble)

Instructions

  1. Make the crust by combining flour, sugar, and salt in a food processor. Add chilled butter and pulse until crumbly. Mix in ice-cold water until dough forms.
  2. Shape the dough into a disk, roll out to fit your pie dish, and chill while preparing the filling.
  3. Prepare the cherry filling by mixing pitted cherries with sugar, cornstarch, lemon juice, almond extract, and salt.
  4. For the crumble topping, combine oats, flour, brown sugar, salt, and cold butter until clumps form.
  5. Assemble the pie by layering the cherry mixture into the crust and topping it with crumble. Bake at 400°F for 20 minutes, then reduce heat to 350°F and bake for an additional 40–45 minutes.
