Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 ¼ teaspoon cream of tartar
- ½ teaspoon salt
- ½ cup canola oil
- ⅔ cup granulated sugar
- 1 large egg (lightly beaten)
- 1 cup finely grated zucchini
- 1 cup mashed bananas
- 1 ½ cups chocolate chips
Instructions
- Preheat the oven to 350°F and grease an 8" x 4" loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, cream of tartar, and salt; set aside.
- In an electric stand mixer bowl, beat together canola oil and granulated sugar until combined. Add the beaten egg and mix well. Then mix in the grated zucchini.
- Gradually alternate adding the dry mixture and mashed bananas into the wet mixture on low speed until just combined.
- Gently fold in chocolate chips with a spatula and pour batter into the prepared pan.
- Bake for 50 to 55 minutes or until a toothpick comes out clean. Tent with foil during the last 15 minutes if browning too quickly. Allow cooling before slicing.
