  • 1/4 cup canola oil (or melted coconut oil)
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F and grease a 9-by-5-inch loaf pan with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Combine dry ingredients into wet ingredients until just mixed; fold in shredded zucchini and 3/4 cup chocolate chips.
  5. Pour batter into the loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes until a toothpick comes out mostly clean.
  7. Cool for about 15 minutes before removing from the pan and slicing.
