  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 minced garlic clove
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime juice and zest, dill, Dijon mustard, garlic, and salt in a bowl until creamy.
  2. In a large pot, bring water to a boil. Add shrimp and cook for 2-3 minutes until pink.
  3. Transfer cooked shrimp to an ice bath for about 3 minutes before draining.
  4. Chop the cooled shrimp into bite-sized pieces. In a mixing bowl, combine shrimp, cucumber, green onions, and dressing; stir until everything is coated evenly.
