Ingredients
- 1 fresh pineapple, cut into rounds
- 2 lbs boneless chicken thighs
- 1/2 cup coconut aminos (or soy sauce)
- 1/4 cup pineapple juice (or water)
- 1/4 cup tomato paste
- 4–6 pitted dates (or maple syrup)
- Spices: garlic powder, chili powder, smoked paprika
Instructions
- Soak dates in warm water for 10-15 minutes. Drain and set aside.
- In a blender or food processor, combine coconut aminos, pineapple juice, tomato paste, soaked dates, garlic powder, chili powder, and smoked paprika. Blend until smooth.
- Place chicken in a shallow dish and pour marinade over it. Toss to coat thoroughly and refrigerate for at least 30 minutes (up to 24 hours).
- Preheat grill to high heat (about 500°F). Grill chicken and pineapple for about 5-6 minutes per side until cooked through and nicely charred.
