  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 (15.5 ounce) jar salsa
  • 2 cups shredded Mexican cheese blend (or cheddar)

Instructions

  1. Preheat the oven to 350°F and position the oven rack in the middle.
  2. In a large skillet, heat olive oil over medium-high heat and brown the ground beef for about 5 minutes.
  3. Add chopped onions and spices; cook until onions soften, about another 5 minutes.
  4. Spread crushed Doritos at the bottom of a 9×13 casserole dish for a crunchy base.
  5. Stir in black beans, corn, salsa, and half of the cheese into the beef mixture; warm through until melted.
  6. Layer beef mixture over Doritos in the casserole dish and top with remaining cheese.
  7. Bake uncovered for 15-20 minutes or until hot and bubbly.
  8. Serve with optional toppings like tomatoes or sour cream.
