- 2 cups crushed Doritos (Nacho Cheese flavor)
- 1 (14 ounce) can black beans (drained & rinsed)
- 1 (12 ounce) can corn (drained)
- 1 (15.5 ounce) jar salsa
- 2 cups shredded Mexican cheese blend (or cheddar)
Instructions
- Preheat the oven to 350°F and position the oven rack in the middle.
- In a large skillet, heat olive oil over medium-high heat and brown the ground beef for about 5 minutes.
- Add chopped onions and spices; cook until onions soften, about another 5 minutes.
- Spread crushed Doritos at the bottom of a 9×13 casserole dish for a crunchy base.
- Stir in black beans, corn, salsa, and half of the cheese into the beef mixture; warm through until melted.
- Layer beef mixture over Doritos in the casserole dish and top with remaining cheese.
- Bake uncovered for 15-20 minutes or until hot and bubbly.
- Serve with optional toppings like tomatoes or sour cream.
