  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 8 cups shredded cabbage
  • 3 garlic cloves (minced)
  • 1 teaspoon fresh ginger (minced)
  • 2 tablespoons olive oil
  • ¼ cup chicken broth
  • 3 tablespoons soy sauce or Tamari
  • 1 tablespoon rice vinegar

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add ground turkey and cook until almost browned, about 5-6 minutes.
  2. Push turkey aside and add onion with remaining oil. Sauté for 3-4 minutes, then add carrots, garlic, and ginger; cook for another 2 minutes.
  3. Pour in chicken broth, scraping up brown bits from the pan. Add cabbage, soy sauce, rice vinegar, salt, and pepper; stir well.
  4. Cover and reduce heat to medium-low; cook for 12-15 minutes until cabbage is tender. Remove from heat and stir in sesame oil.
  5. Serve over rice or noodles with desired toppings.
