- 2 tablespoons unsalted butter
- 1 large onion, thinly sliced
- 4 slices bread (sourdough, whole wheat, or white)
- 2 tablespoons mayonnaise
- 2 tablespoons Dijon mustard
- 2 cups shredded Gruyère cheese
- 2 cups shredded Swiss cheese
- Salt and pepper, to taste
Instructions
- In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and cook for 10–12 minutes until golden brown and caramelized. Season with salt and pepper.
- Spread mayonnaise on one side of each slice of bread and Dijon mustard on the other side.
- On the mustard side, layer Gruyère cheese, followed by Swiss cheese and caramelized onions. Close sandwiches with the mayonnaise side facing out.
- In the same skillet, melt the remaining butter over medium heat. Grill sandwiches for 4–5 minutes per side until golden brown and cheese is melted.
- Slice each sandwich in half diagonally and serve hot.
