  • 2 tablespoons unsalted butter
  • 1 large onion, thinly sliced
  • 4 slices bread (sourdough, whole wheat, or white)
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 cups shredded Gruyère cheese
  • 2 cups shredded Swiss cheese
  • Salt and pepper, to taste

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and cook for 10–12 minutes until golden brown and caramelized. Season with salt and pepper.
  2. Spread mayonnaise on one side of each slice of bread and Dijon mustard on the other side.
  3. On the mustard side, layer Gruyère cheese, followed by Swiss cheese and caramelized onions. Close sandwiches with the mayonnaise side facing out.
  4. In the same skillet, melt the remaining butter over medium heat. Grill sandwiches for 4–5 minutes per side until golden brown and cheese is melted.
  5. Slice each sandwich in half diagonally and serve hot.
