  • 2 lb Chuck Roast
  • 2 cups Red or Yellow Onion (thinly sliced)
  • 3 Garlic Cloves (minced)
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Worcestershire Sauce
  • 1/4 cup Tomato Sauce
  • 1 cup Beef Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Fresh Thyme (chopped, or 1/4 tsp dried)
  • 2 tsp Fresh Parsley (chopped)
  • 12 tbsp All-Purpose Flour (or cornstarch)

Instructions

  1. Whisk together tomato sauce, beef broth, minced garlic, thyme, Worcestershire sauce, and white wine vinegar in a bowl.
  2. Trim excess fat from the chuck roast and season all sides with salt and black pepper.
  3. In the slow cooker, layer half of the sliced onions, pour half of the sauce mixture over them, place the chuck roast on top, add remaining onions, and pour the rest of the sauce.
  4. Cover and cook on high for 4 hours or low for 7 hours until fork-tender.
  5. For gravy, mix cornstarch or flour with drippings from the slow cooker over low heat until thickened.
  6. Serve with garnish of fresh parsley over mashed potatoes.
