  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 large eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat the oven to 160ºC (320ºF) with a fan or 170ºC (338ºF). Line a baking tray with parchment paper.
  2. In a heatproof bowl, melt dark chocolate and butter over simmering water until smooth. Stir in vanilla extract.
  3. In a separate bowl, whisk eggs with both sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt in another bowl; mix in chocolate chips.
  5. Gently fold the melted chocolate into the egg mixture, then fold in dry ingredients until just combined.
  6. Scoop tablespoonfuls onto the prepared tray, leaving space for spreading. Bake for 12–14 minutes until set but soft in the center.
  7. Cool slightly on the tray before transferring to a wire rack.
