Ingredients

  • 300g uncooked Orzo
  • 150g Baby Plum Tomatoes (halved)
  • 100g Feta Cheese (cubed)
  • 100g Kalamata Olives (halved)
  • 3 tbsp Red Onion (finely diced)
  • 1 small clove Garlic (finely diced)
  • 75g Green Pepper (finely diced)
  • 75g Cucumber (sliced)
  • Juice of 1/2 Lemon
  • Dressing: Olive Oil, Red Wine Vinegar, Fresh Parsley, Dried Oregano, Salt & Pepper

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, parsley, oregano, salt, and pepper. Add tomatoes, feta, olives, onion, and garlic; mix well. Let marinate for at least one hour.
  2. Cook orzo in salted boiling water until al dente. Drain and rinse with cold water to cool.
  3. Combine cooled orzo with the marinated mixture. Stir in green pepper and cucumber; add lemon juice. Adjust seasoning as needed.
