Ingredients
- 300g uncooked Orzo
- 150g Baby Plum Tomatoes (halved)
- 100g Feta Cheese (cubed)
- 100g Kalamata Olives (halved)
- 3 tbsp Red Onion (finely diced)
- 1 small clove Garlic (finely diced)
- 75g Green Pepper (finely diced)
- 75g Cucumber (sliced)
- Juice of 1/2 Lemon
- Dressing: Olive Oil, Red Wine Vinegar, Fresh Parsley, Dried Oregano, Salt & Pepper
Instructions
- In a large bowl, whisk together olive oil, red wine vinegar, parsley, oregano, salt, and pepper. Add tomatoes, feta, olives, onion, and garlic; mix well. Let marinate for at least one hour.
- Cook orzo in salted boiling water until al dente. Drain and rinse with cold water to cool.
- Combine cooled orzo with the marinated mixture. Stir in green pepper and cucumber; add lemon juice. Adjust seasoning as needed.
