- 1 1/2 cups grape tomatoes
- 1 seedless cucumber
- 1 bell pepper
- 1/2 small red onion
- 1/2 cup Kalamata olives
- 2/3 cup feta cheese
- 1/4 cup fresh parsley
- 1/2 cup olive oil
- 1/4 cup water
- 3 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1 teaspoon dried mint
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Cook the bowtie pasta in salted boiling water until al dente. Drain and rinse under cold water.
- Chop the grape tomatoes, cucumber, bell pepper, and red onion. Combine in a large mixing bowl with Kalamata olives.
- In a jar with a lid, mix olive oil, water, vinegar, lemon juice, honey, mustard, garlic, and spices. Shake well to combine.
