  • 1 cup corn (from about 2 ears)
  • 4 cloves garlic (minced)
  • 3 Hatch chiles (fire roasted), seeds removed and diced
  • 1 (16 oz) jar salsa verde
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 lime (juiced)
  • 1 small rotisserie chicken (pulled)
  • 1/2 cup long grain white rice
  • Fresh cilantro and avocado for garnish

Instructions

  1. Heat olive oil in a large stock pot over medium heat. Sauté diced onion and corn for about 6 minutes until fragrant.
  2. Add minced garlic and cook for an additional minute before stirring in ground coriander, cumin, paprika, salt, and black pepper.
  3. Incorporate hatch chiles, salsa verde, chicken broth, water, and lime juice. Bring to a boil.
  4. Stir in pulled rotisserie chicken and chopped cilantro; reduce heat to simmer for 20 minutes.
  5. Add long grain white rice and cook until tender, about 15 minutes.
  6. Garnish with cilantro before serving.
