  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 tablespoons dijon mustard
  • 3 tablespoons honey
  • 1 pound mixed vegetables (carrots, asparagus, zucchini, yellow squash, red bell pepper)
  • 1 ½ teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. In a measuring pitcher, combine olive oil, balsamic vinegar, dijon mustard, honey, thyme, garlic powder, salt, and black pepper. Whisk until smooth.
  2. Cut vegetables into uniform sizes and place them on a large rimmed baking sheet. Pour marinade over the vegetables and toss gently to coat.
  3. Allow vegetables to marinate for at least 30 minutes.
  4. Preheat the grill to medium heat (about 350°F).
  5. Grill the carrots first for about 3-4 minutes before adding remaining vegetables. Grill everything for another 8-10 minutes total until tender.
