  • 1 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 4 cloves garlic (minced)
  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 (6-ounce) can tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • Salt and pepper to taste

Instructions

  1. In a large soup pot, heat the olive oil over medium-high heat. Sauté the chopped onion and celery for about 5-7 minutes until softened.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Incorporate the ground beef into the pot; cook until browned, breaking it apart with a spoon for about 8 minutes.
  4. Sprinkle flour over the mixture and stir well for an additional minute or two.
  5. Mix in tomato paste until fully combined.
  6. Pour in beef broth, Worcestershire sauce, and Italian seasoning. Add diced potatoes and sliced carrots.
  7. Bring to a boil on high heat then reduce to a simmer. Cover loosely and cook for at least 30 minutes, stirring occasionally.
  8. If using frozen peas, stir them in before serving; season with salt and pepper to taste.
