  • ¾ cup whole wheat flour (or gluten-free flour)
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 tbsp unsalted butter (or coconut oil), melted
  • 1 large egg white
  • 1 tsp vanilla extract
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • Optional: mix-ins (nuts, dried fruit)

Instructions

  1. Preheat your oven to 300°F (150°C) and coat an 8-inch square baking pan with nonstick cooking spray.
  2. In a medium bowl, whisk together instant oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine melted butter or coconut oil with egg white and vanilla extract. Stir in maple syrup and almond milk until well mixed.
