  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (fresh or frozen)
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt
  • Pepper

Instructions

  1. Heat a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear for 3-4 minutes on each side until golden; remove from pan.
  2. In the same skillet, toast uncooked rice for 1-2 minutes.
  3. Stir in chicken broth, BBQ sauce, and honey until well combined.
  4. Place seared chicken on top of the rice mixture, bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes.
  5. Add mixed vegetables on top of the rice; cover and cook an additional 5 minutes until rice is tender and chicken reaches an internal temperature of 165°F (74°C).
  6. Let rest for 5 minutes before serving; fluff rice with a fork and garnish as desired.
