  • 1 tablespoon olive oil
  • 1 pound kielbasa, cut into ½ inch pieces
  • 2 garlic cloves, minced
  • ½ cup yellow onion, finely diced
  • ½ cup carrots, finely diced (2 large carrots)
  • ½ cup celery, finely sliced (23 stalks)
  • 4 cups chicken stock
  • 1 ½ pounds potatoes, cubed
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add the kielbasa and cook until browned (5-6 minutes). Remove with a slotted spoon.
  2. Sauté garlic, onion, carrots, and celery in the same pot for about 2 minutes until soft.
  3. Pour in the chicken stock and add the cubed potatoes. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until potatoes are tender.
  4. Stir in the cooked kielbasa, heavy cream (or milk), cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for another 5-10 minutes until cheeses melt.
  5. Garnish with chopped parsley before serving.
