  • 1/3 cup melted butter or coconut oil
  • 3 large eggs
  • 1/2 cup Greek yogurt

  • 1 cup gluten-free all-purpose baking flour
  • 1 cup blanched almond flour
  • 1/2 cup vanilla protein powder
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar (light brown, coconut, or white)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray and line a 9×5 loaf pan with parchment paper.
  3. Puree the bananas until smooth, then measure out into a large mixing bowl.
  4. Whisk in melted butter, eggs, Greek yogurt, and vanilla extract until smooth.
  5. In another bowl, whisk together gluten-free flour, almond flour, protein powder, baking powder, cinnamon, and salt.
  6. Gradually add dry ingredients to wet ingredients until just combined.
  7. Fold in optional add-ins like chocolate chips if desired.
  8. Pour batter into the prepared loaf pan and sprinkle additional chocolate chips on top if using.
  9. Bake for 55-65 minutes or until a toothpick comes out clean.
  10. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
