Ingredients
Scale
- 12 ounces dried spaghetti or linguine
- 1 pound large shrimp, shelled and deveined
- 4 tablespoons unsalted butter
- 3 tablespoons extra virgin olive oil
- 5 cloves garlic, minced
- 1/2 cup dry white wine or low-sodium chicken broth
- Juice and zest of one lemon
- 1 cup shredded low-moisture mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the Pasta: In a large pot, boil salted water and cook pasta until just shy of al dente. Drain and set aside.
- Sear the Shrimp: In a skillet, heat olive oil and 2 tablespoons of butter over medium heat. Season shrimp with salt and pepper, sear for about 1-2 minutes per side until opaque. Remove from skillet.
- Prepare the Sauce: In the same skillet, melt remaining butter. Sauté garlic until fragrant, then add wine (or broth), lemon juice, and zest. Simmer for 2-3 minutes until slightly reduced.
- Combine Ingredients: Add drained pasta to the skillet, tossing with the sauce. Stir in half of the Parmesan and parsley, then fold in cooked shrimp.
- Bake: Transfer mixture to a greased baking dish, top with mozzarella and remaining Parmesan. Bake uncovered at 375°F (190°C) for about 15 minutes until cheese is bubbly and golden.
- Serve: Garnish with remaining parsley and enjoy hot!
