  • ⅓ cup neutral oil (vegetable, avocado, canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 oz candy melts
  • Sprinkles or nonpareils

Instructions

  1. Preheat oven to 325-350°F (162-175°C) as per the cake mix instructions.
  2. Mix all cake ingredients in a bowl; pour into a greased pan and bake according to package directions.
  3. Once baked and cooled, crumble the cake into a large bowl.
  4. Prepare buttercream by mixing softened butter, powdered sugar, and vanilla; combine with crumbled cake until well blended.
  5. Roll the mixture into balls (about 1¼ inches), freeze for 15 minutes, then insert lollipop sticks dipped in melted candy melts.
  6. Chill again for another 15 minutes before dipping each pop in melted candy melts.
  7. Tap off excess candy melt and decorate with sprinkles immediately before setting upright in a styrofoam block.
