  • 6 cups fresh rhubarb, sliced
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • ¾ cup rolled oats
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 6 tablespoons unsalted butter, softened
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 375°F and position the rack in the middle.
  2. In a large bowl, combine rhubarb, strawberries, and lemon juice. Add granulated sugar and cornstarch; mix well.
  3. Transfer fruit mixture to a greased 9" x 13" baking dish.
  4. In a separate bowl, mix brown sugar, flour, oats, cinnamon, salt, butter, and oil until crumbly. Sprinkle over the fruit filling.
  5. Bake for 45–50 minutes until bubbling and golden brown on top. Let cool for about 15 minutes before serving.
