Ingredients
- 1 pound rotini
- 1 pound lean ground beef
- 1 packet taco seasoning
- 15 ounces canned black beans (drained and rinsed)
- 8 ounces canned corn (drained)
- 2 cups halved cherry tomatoes
- 16 ounces Catalina dressing
- 9 ounces Nacho Cheese Doritos (crushed)
- 2 cups shredded iceberg lettuce
Instructions
- Cook the rotini in a large pot of boiling water until al dente. Drain and rinse with cold water.
- In a skillet, brown the ground beef over medium heat. Drain excess grease and stir in taco seasoning with water; cook until liquid evaporates.
- In a large mixing bowl, combine cooked rotini, beef, black beans, corn, cherry tomatoes, and cheese.
- Whisk together Catalina dressing and sour cream. Pour over salad mixture; stir to coat evenly.
