Ingredients

  • 2 lbs chicken thighs (or breasts), cut into 1" cubes
  • 1/3 cup brown sugar
  • 1/3 cup low sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Prepare the teriyaki sauce by combining cornstarch and water in a bowl. In a saucepan, mix remaining ingredients with the cornstarch mixture and simmer until thickened. Let cool.
  2. Marinate cubed chicken in half of the cooled sauce for at least 30 minutes.
  3. Thread marinated chicken onto skewers. Grill over medium heat for about 20-30 minutes, basting with remaining sauce until cooked through (165°F internal temperature).
  4. Serve topped with sesame seeds and green onions.
