Ingredients
- 180g sushi rice
- 30ml maple syrup
- 2 salmon fillets
- 150g edamame beans
- 0.5 ripe avocado
- Gluten-free tamari soy sauce
- 3 tbsp rice vinegar
- 1 tsp caster sugar
- 0.5 tsp fine salt
- 1 tsp sesame oil
- 0.5 tsp garlic granules
- 1 tsp mirin
- 2 tbsp sesame seeds
- 4 spring onions
Instructions
- Cook sushi rice according to package instructions. Mix rice vinegar, sugar, and salt; pour over hot rice and fluff.
- Toast sesame seeds in a small frying pan until golden brown.
- Combine maple syrup, sesame oil, tamari soy sauce, garlic granules, and mirin to create the teriyaki marinade. Cut salmon into chunks and marinate for at least 10 minutes.
- In the same pan, cook salmon chunks in the teriyaki sauce over high heat until cooked through.
