  • 180g sushi rice
  • 30ml maple syrup
  • 2 salmon fillets
  • 150g edamame beans
  • 0.5 ripe avocado
  • Gluten-free tamari soy sauce
  • 3 tbsp rice vinegar
  • 1 tsp caster sugar
  • 0.5 tsp fine salt
  • 1 tsp sesame oil
  • 0.5 tsp garlic granules
  • 1 tsp mirin
  • 2 tbsp sesame seeds
  • 4 spring onions

Instructions

  1. Cook sushi rice according to package instructions. Mix rice vinegar, sugar, and salt; pour over hot rice and fluff.
  2. Toast sesame seeds in a small frying pan until golden brown.
  3. Combine maple syrup, sesame oil, tamari soy sauce, garlic granules, and mirin to create the teriyaki marinade. Cut salmon into chunks and marinate for at least 10 minutes.
  4. In the same pan, cook salmon chunks in the teriyaki sauce over high heat until cooked through.
  5. Assemble bowls by layering sushi rice, edamame beans, sliced avocado, and glazed salmon. Top with toasted sesame seeds.
