  • 1 cup cold unsalted butter (cut into cubes)
  • 7 tablespoons ice-cold water
  • 1 egg (for egg wash)
  • Optional: almond extract, coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the cherries with sugar, cornstarch, lemon juice, vanilla extract, salt, and optional almond extract. Mix well and set aside.
  3. For the crust, pulse together flour, sugar, and salt in a food processor. Add cold butter cubes and pulse until crumbly. Gradually add ice-cold water until dough forms.
  4. Roll out half of the dough into a circle and fit it into a pie dish. Pour the cherry filling into the crust and dot with butter.
  5. Roll out the remaining dough for the top (whole or lattice) and place it over the filling. Brush with an egg wash.
  6. Chill for 20 minutes while preheating your oven further.
