  • 4 green onions (thinly sliced)
  • 1/3 cup chopped green bell pepper
  • 1/3 cup chopped red bell pepper
  • 2 tablespoons butter
  • 4 ounces smoked ham (chopped)
  • 1 ½ cups shredded colby jack or cheddar cheese
  • 1 cup heavy cream
  • 6 large eggs
  • Seasonings: garlic salt, black pepper, onion powder, ground mustard

Instructions

  1. Preheat oven to 375°F and prick the bottom of the pie shell with a fork. Bake for about 5 minutes to par-bake.
  2. In a skillet, melt butter over medium heat. Sauté green onions and bell peppers until soft (2-3 minutes).
  3. Layer half the ham and cheese in the par-baked pie shell.
  4. In a bowl, whisk together heavy cream, eggs, and seasonings until blended; add sautéed vegetables.
  5. Pour half the custard mixture over the first layer of ham and cheese; repeat layering with remaining ingredients.
  6. Bake on a baking sheet for 10 minutes at 375°F; then reduce temperature to 350°F and bake for an additional 30-40 minutes until set.
  7. Let cool for at least 20 minutes before slicing.
