Ingredients

Scale
  • ½ cup vegetable oil
  • 1 ½ cups granulated sugar
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon kosher salt
  • 3 cups finely shredded zucchini (do not drain)
  • 1 ¼ cups semi-sweet chocolate chunks

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch pan with butter or baking spray and line it with parchment paper.
  2. In a large bowl, mix together the vegetable oil, sugar, and vanilla extract until well combined.
  3. Add in the flour, cocoa powder, baking soda, and salt. Mix until just combined; the batter will be dry.
  4. Gently fold in the shredded zucchini by hand and let the batter rest for 5 minutes to hydrate.
  5. Incorporate the chocolate chunks into the batter, mixing until evenly distributed.
  6. Spread the batter into the prepared baking pan and bake for 25–35 minutes or until a toothpick comes out with moist crumbs.
  7. Allow to cool before slicing into squares.
