Description

Zucchini Grilled Cheese is a deliciously innovative take on the classic grilled cheese sandwich that swaps traditional bread for crispy, garlic butter zucchini patties. This low-carb delight is perfect for lunch, dinner, or even a quick snack, appealing to both keto followers and veggie fans. With gooey melted cheddar cheese tucked between two savory patties, it’s a satisfying meal that can be enjoyed any time of day. Best of all, this recipe is quick and easy, taking just 20 minutes from prep to plate!

Ingredients

Scale
  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup cornstarch
  • Salt and pepper to taste
  • 2 tablespoons garlic butter
  • 12 cups shredded cheddar cheese

Instructions

  1. Preheat skillet over medium heat.
  2. Squeeze moisture from grated zucchini using a cheesecloth or kitchen towel.
  3. In a mixing bowl, combine drained zucchini with egg, Parmesan, cornstarch, salt, and pepper; mix until well blended.
  4. Heat garlic butter in the skillet. Form half of the mixture into a patty and cook for 3-4 minutes until golden brown; repeat for the second patty.
  5. Place shredded cheddar on one patty, top with the second patty and cook for an additional 3 minutes until the cheese melts.
  6. Let cool slightly before slicing and serve warm.
